Innovative Ingredients

For generations we have been leading the world in dairy innovation. Fonterra Ingredients is committed to innovation with a core focus to add value through the development of new ingredients and/or new products with clear value for our customers.

Our Ingredients Innovation Team is made up of nine technical teams, with four focusing on consumer applications and the other five on strategic applied science.

Consumer application teams

  • Cultured Foods – developing new and improved cultured foods and chilled dairy applications for existing and new ingredients.

  • Cheese Foods – creating new value propositions for our customers by developing new products via traditional and novel processing technologies and the development of new ingredients and formulations.

  • Snacking and Convenience – developing attractive new value propositions by incorporating new and existing ingredients into snacking and convenience applications, eg, nutrition bars, culinary foods, etc

  • Beverages – developing new ingredients, nutritional solutions and new products for milk powder, infant formula, beverage whiteners and beverage applications.

Applied science teams

  • Ingredient Processing – the application of process technology to create opportunities for new ingredients, products or businesses. These include membrane and separation processes, fermentation, preservation technology and extraction technology.

  • Ingredient Functionality – design of dairy-based and hybrid ingredients with value-adding functionality. This includes understanding chemical and colloidal properties of food component interaction, and rheological and material properties.

  • Biotransformations and Flavour – the use of enzymes and micro-organisms to add value to milk products through: natural flavour generation, control, manipulation and delivery; flavour ingredient production; and biotransformations for nutrition and functional innovations.

  • Nutrition and Bioactives – discovery and development of dairy-derived ingredients that provide nutrition and health benefits of commercial value to our customers and ourselves.

  • Probiotics – exploitation of probiotic organisms and their components, focusing on strain selection and immune screening; stabilisation and delivery improvement; and bioactive components.

The Ingredients innovation teams are closely aligned with the marketing team to enable longer-term sustainable development and rapid commercialisation of ideas.
